  • 1 kg Chicken Wings Skin-on wings recommended
  • 2 tbsp Oil Sesame or vegetable oil as substitutes
For the Marinade
  • 1/4 cup Soy Sauce Low-sodium preferred
  • 2 tbsp Brown Sugar Honey or maple syrup can be used
  • 2 tbsp Lemon/Lime Juice Fresh juice is ideal
  • 3 cloves Garlic Cloves Minced or crushed
  • 1 tbsp Fresh Ginger Grated
  • 1 number Red Chilli Adjust based on spice tolerance
  • 2 stalks Lemongrass Roughly chopped
  • 1 tsp Salt Adjustable to preference
For the Topping
  • 1/4 cup Peanuts Roughly chopped, optional
  • 2 tbsp Spring Onion Finely chopped

Step-by-Step Instructions
  1. Prepare Marinade: In a food processor, combine oil, soy sauce, brown sugar, lemon juice, garlic, grated ginger, red chilli, and roughly chopped lemongrass. Blend until smooth and season with salt.
  2. Marinate: Place wings in a mixing bowl, cover with marinade, toss to coat, cover, and refrigerate for at least 30 minutes or preferably overnight.
  3. Preheat Air Fryer: Set air fryer to 200°C (390°F) for 5 minutes. Let marinated wings sit at room temperature for 5-10 minutes.
  4. Cook Wings: Arrange wings in a single layer in the air fryer basket. Air fry for 15-20 minutes, flipping halfway through.
  5. Toast Peanuts: In a small pan, toast chopped peanuts for about 5 minutes until golden brown.
  6. Serve: Remove wings, let rest, transfer to a platter, and top with toasted peanuts and spring onions.
