  • 2 tablespoons lemon zest

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper or aluminum foil.
  2. In a medium mixing bowl, whisk together all-purpose flour, oats, salt, and baking soda.
  3. In a large bowl, melt the butter and then mix in the brown sugar and vanilla extract until smooth.
  4. Stir the dry mixture into the wet mixture until just combined; reserve ¾ cup for topping and press the rest into the pan.
  5. Bake the crust for 10 minutes or until lightly golden; let it cool slightly.
  6. Whisk together the sweetened condensed milk, sour cream, egg yolk, lemon juice, lemon zest, and vanilla extract.
  7. Pour the lemon filling over the crust and sprinkle the reserved crumb mixture on top.
  8. Bake for an additional 17-20 minutes, until the topping is golden and the filling is set with a slight jiggle.
  9. Cool completely on a wire rack before slicing into squares.
