Step-by-Step Instructions for Healthy Cucumber Pasta Salad
  1. In a small bowl, combine Greek yogurt, mayonnaise, lemon juice, and your choice of dried herbs. Whisk together until smooth and creamy. Let sit for 10 minutes.
  2. Bring a large pot of salted water to a boil, then add the chosen short pasta. Cook until al dente, around 8-10 minutes. Drain and rinse under cold water.
  3. Slice the English cucumber thinly and chop the onion finely. Soak the onion in cold water for 10 minutes to mellow the flavor.
  4. In a large mixing bowl, toss together the cooled pasta, sliced cucumber, and drained onion. Add cherry tomatoes or bell peppers if desired.
  5. Pour the prepared dressing over the combined ingredients and gently toss until well-coated.
  6. Cover and chill in the refrigerator for at least 40 minutes before serving.
