  • 1 tsp Cumin Feel free to omit if you prefer a milder flavor.
  • 1 tsp Smoked Paprika Swap it with regular paprika if preferred.
  • 1 tsp Sugar Optional if you prefer less sweetness.
  • 1 tsp Salt Adjust according to your taste.
  • 2 limes Limes Juice adds zesty brightness.
  • 1/4 cup Mayonnaise Optional for creaminess.

Method
 

Step-by-Step Instructions
  1. Cook the pasta according to package instructions, usually about 8-10 minutes, until al dente. Drain and rinse under cool water.
  2. In a large bowl, combine Greek yogurt, olive oil, minced garlic, cumin, smoked paprika, sugar, salt, and lime juice. Whisk until smooth.
  3. Once the pasta is cooled, add it to the dressing. Fold in black beans, corn, spinach, and cilantro. Stir gently to combine.
  4. Cover with plastic wrap and refrigerate for at least two hours to allow flavors to meld.
