For the Salad Base
  • 1.5 cups dried instant couscous choose instant for quick prep
  • 1 can chickpeas rinsed
  • 1.5 cups boiling water to hydrate couscous
For the Vegetables
  • 1 each English cucumber slice thinly
  • 1 pints cherry tomatoes halved
  • 1 each red onion thinly sliced
  • 1 cups flat-leaf parsley chopped
  • 1 cups fresh basil chopped
  • 0.5 cups fresh mint chopped
For the Dressing
  • 3 tablespoons extra-virgin olive oil or avocado oil
  • 0.5 cups fresh lemon juice freshly squeezed
  • 4 cloves garlic finely grated
For Spicing It Up
  • 2 teaspoons ground cumin or coriander as a substitute
  • 1.5 teaspoons ground coriander
  • 1.5 teaspoons fine sea salt adjust if using salted cheese
  • 0.25 teaspoons red pepper flakes adjust for spice preference
For the Cheese
  • 8 oz halloumi cheese or crumbled feta as a substitute

Method
 

Step-by-Step Instructions
  1. In a large non-stick skillet, heat 2 tablespoons of extra-virgin olive oil over medium heat. Add garlic, ground cumin, ground coriander, fine sea salt, and red pepper flakes. Sauté for about 1 minute until fragrant, then stir in chickpeas, cooking for an additional 3 minutes. Remove from heat and set aside.
  2. In a mixing bowl, combine dried instant couscous. Carefully pour boiling water over the couscous and cover tightly. Allow to steam for 5 minutes, then fluff with a fork and mix in fresh lemon juice.
  3. Transfer the sautéed chickpea mixture into the bowl with couscous. Add sliced cucumber, halved cherry tomatoes, and sliced red onion. Stir in chopped parsley, basil, and mint. Toss gently until combined.
  4. Rinse the skillet, return to medium-high heat, and add sliced halloumi cheese. Cook for 1 to 2 minutes on each side until golden brown. Remove from heat, tear into bite-sized pieces, and scatter over the salad.
