Method
 

Preparation Instructions
  1. Preheat your grill to medium-high heat, around 375°F to 400°F.
  2. Husk and wash the corn, removing silk. Brush each ear with olive oil and sprinkle with salt and pepper.
  3. Grill the corn for 10-15 minutes, turning occasionally, until golden brown and charred.
  4. Remove from the grill, cool slightly, and cut the kernels off the cobs into a mixing bowl.
  5. Mix the corn with mayonnaise, cotija cheese, cilantro, lime juice, and chili powder until well combined.
  6. Serve warm or chill in the fridge for 30 minutes before serving.
