Step-by-Step Instructions
  1. In a medium saucepan, warm olive oil over medium heat until shimmering.
  2. Add finely diced onion and sauté for 2-3 minutes until translucent.
  3. Introduce minced garlic, cooking for about 30 seconds until fragrant.
  4. Pour in the rice, stirring to coat and toasting for about 1 minute.
  5. Add chicken broth, lemon juice and zest, oregano, salt, and pepper; stir thoroughly.
  6. Bring to a gentle boil, then reduce heat to low and cover, allowing to simmer for 18-20 minutes.
  7. After 18 minutes, remove from heat and let rest covered for 5 minutes before fluffing with a fork.
