  • 2 cups Blood Oranges sliced
  • 4 cups Arugula fresh
  • 1 cup Red Onion thinly sliced
  • 1/2 cup Roasted Pistachios chopped
  • 1/4 cup Fresh Basil or Mint chopped
For the Dressing
  • 1/4 cup Olive Oil
  • 2 tablespoons Fresh Lime Juice zested
  • 1 tablespoon Honey or agave/maple syrup
  • 1 pinch Salt to taste
  • 1 pinch Black Pepper to taste

Preparation Steps
  1. In a small bowl, whisk together olive oil, fresh lime juice, honey, salt, and black pepper until well combined.

  3. On a serving platter, arrange a layer of fresh arugula as a base.
  4. Layer the sliced citrus fruits and red onions over the arugula.
  5. Drizzle the dressing evenly over the salad.
