Method
 

Step-by-Step Instructions
  1. Toast spices in a medium pan over medium heat for 2-3 minutes until fragrant.
  2. Char onion, garlic, and ginger in the same pan for 3-4 minutes until lightly browned.
  3. Simmer the broth with toasted spices and charred onion, garlic, and ginger for 30 minutes.
  4. Cook rice noodles according to package instructions, then drain and rinse.
  5. Cook the pressed tofu in a skillet for 10-12 minutes until golden brown, adding tamari.
  6. Sauté sliced mushrooms in another pan for 5-10 minutes until tender.
  7. Strain the broth to remove solids and adjust seasoning as needed.
  8. Assemble bowls with noodles, tofu, mushrooms, and broth, finishing with garnishes.
