  • 4 breasts chicken boneless, skinless
  • 5 cups fresh greens mixed salad leaves
  • 2 cups cherry tomatoes halved
  • 1 medium red onion sliced
Tzatziki Sauce
  • 1 cup Greek yogurt plain
  • 1 cup cucumber grated and drained
  • 2 cloves garlic minced
  • 2 tablespoons lemon juice fresh
  • 1 tablespoon dill fresh or dried
  • 1 pinch salt
Seasoning
  • 1 teaspoon salt for chicken seasoning
  • 1 teaspoon black pepper for chicken seasoning

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place chicken breasts on the prepared baking sheet and season with salt, pepper, and herbs.
  3. Roast for 25-30 minutes, until cooked through (165°F/75°C). Let rest for 5 minutes before shredding.
  4. In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and a pinch of salt.
  5. In a large salad bowl, toss together fresh greens, cherry tomatoes, and sliced red onion.
  6. Add shredded chicken, top with tzatziki sauce, and toss gently to coat.
  7. Serve immediately or chill for a short period before enjoying.
