  • 1/2 tsp Salt Balances sweetness; do not omit.
  • 1 cup Hot Water Essential for achieving the cake's tender crumb.
For the Mousse

  • 2 tbsp Cornstarch No substitutions are advised to maintain structure.

  • 4 oz White Chocolate Avoid chocolate chips during melting for better texture.
  • 4 oz Milk Chocolate Needed for smoothness and sweetness.
For the Ganache
  • 1 cup Heavy Cream Needed to create a glossy finish for the ganache.
  • 8 oz Milk Chocolate Essential for the perfect drip over the finished cake.

Equipment

  • 9-inch round cake pans
  • Mixing Bowls
  • Saucepan
  • whisk
  • spatula

Method

Prepare Cake Layers
  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans, lining the bottoms with parchment paper.
  2. In a large mixing bowl, combine the dry ingredients—flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the wet ingredients: sugar, eggs, milk, sour cream, and vegetable oil.
  4. Gradually combine the two mixtures, then carefully add hot water to create a smooth batter.
  5. Pour the batter into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Make Mousses
  1. While the cake layers are cooling, heat one cup of heavy cream over medium heat until it simmers.
  2. In a separate bowl, whisk together egg yolks, sugar, and cornstarch until thick.
  3. Gradually drizzle the hot cream into the egg mixture, whisking constantly.
  4. Return the mixture to the saucepan and cook until it coats the back of a spoon.
  5. Divide this custard into two bowls; melt dark chocolate in one and white chocolate in the other.
  6. Fold whipped cream into each bowl to create the rich chocolate mousses.
Assemble Cake
  1. Once your cake layers have fully cooled, place one layer on a serving plate and spread the dark chocolate mousse on top.
  2. Carefully place the second cake layer on top, then spread the white chocolate mousse over the entire cake, smoothing it with a spatula.
  3. Refrigerate the assembled cake for at least 2 hours, allowing the mousses to set beautifully.
Prepare Ganache
  1. To create a glossy ganache for your cake, heat the remaining heavy cream until just steaming.
  2. Pour this hot cream over the chopped milk chocolate in a large bowl.
  3. Let it sit for a few minutes, then stir until completely smooth and glossy.
  4. Allow the ganache to cool slightly before gently drizzling it over the assembled cake.
Final Chilling
  1. After drizzling with ganache, place the cake back in the refrigerator for another 30 minutes to set the ganache.
  2. Garnish with fresh berries or a sprinkle of cocoa powder before serving.
