Prepare Cake Layers
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans, lining the bottoms with parchment paper.
- In a large mixing bowl, combine the dry ingredients—flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the wet ingredients: sugar, eggs, milk, sour cream, and vegetable oil.
- Gradually combine the two mixtures, then carefully add hot water to create a smooth batter.
- Pour the batter into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Make Mousses
- While the cake layers are cooling, heat one cup of heavy cream over medium heat until it simmers.
- In a separate bowl, whisk together egg yolks, sugar, and cornstarch until thick.
- Gradually drizzle the hot cream into the egg mixture, whisking constantly.
- Return the mixture to the saucepan and cook until it coats the back of a spoon.
- Divide this custard into two bowls; melt dark chocolate in one and white chocolate in the other.
- Fold whipped cream into each bowl to create the rich chocolate mousses.
Assemble Cake
- Once your cake layers have fully cooled, place one layer on a serving plate and spread the dark chocolate mousse on top.
- Carefully place the second cake layer on top, then spread the white chocolate mousse over the entire cake, smoothing it with a spatula.
- Refrigerate the assembled cake for at least 2 hours, allowing the mousses to set beautifully.
Prepare Ganache
- To create a glossy ganache for your cake, heat the remaining heavy cream until just steaming.
- Pour this hot cream over the chopped milk chocolate in a large bowl.
- Let it sit for a few minutes, then stir until completely smooth and glossy.
- Allow the ganache to cool slightly before gently drizzling it over the assembled cake.
Final Chilling
- After drizzling with ganache, place the cake back in the refrigerator for another 30 minutes to set the ganache.
- Garnish with fresh berries or a sprinkle of cocoa powder before serving.

Notes
Use high-quality chocolate and cocoa powder for the best flavor. Ensure the cake layers cool completely before assembling to avoid melting the mousse layers.
