  • Salt and black pepper Adjust to personal liking
  • 0.25 cup fresh cilantro or parsley, chopped Basil or chives can also brighten the dish up
  • 2 cups cooked rice Quinoa or couscous are great alternatives

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with olive oil.
  2. In a bowl, combine the chicken, zucchinis, and onion, cutting them into uniform pieces.
  3. Drizzle olive oil, add garlic, smoked paprika, cumin, oregano, salt, and black pepper, and toss together.
  4. Optionally, place sliced zucchini in a colander, sprinkle with salt, and let it sit for 15 minutes. Pat dry before use.
  5. Transfer the mixture to the greased baking dish, spreading it in a single, even layer.
  6. Bake for 25 to 30 minutes, checking for an internal temperature of 165°F.
  7. Broil for an additional 2 to 3 minutes for a caramelized finish, watching closely.
  8. Let it rest for 3 to 4 minutes, garnish with cilantro or parsley, and serve over cooked rice.
