Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Carefully slice the salmon fillets lengthwise to create pockets.
  3. Brush each salmon fillet with olive oil and sprinkle with salt and pepper.
  4. Sauté the baby spinach in a hot skillet with olive oil for about 2 minutes until wilted, season with Italian seasoning, paprika, cayenne, salt, and pepper.
  5. Remove the skillet from heat and fold in the chopped roasted red peppers, feta, and parmesan cheese.
  6. Stuff the spinach-feta filling into the pockets of the salmon fillets.
  7. Bake the stuffed salmon for 12-17 minutes until opaque and flakes easily.
  8. Let the stuffed salmon cool for a minute before serving hot.
