  • 1 tsp Smoked Paprika adjust to taste
  • 1 tsp Chili Powder adjust to taste
  • 1 tsp Salt to taste
  • 1 tsp Pepper to taste

Preparation Steps
  1. Step 1: Roast the Corn - Heat a skillet over medium-high heat, add olive oil and corn, frying for 10-15 minutes until charred.
  2. Step 2: Cook the Pasta - Boil salted water, add pasta, and cook until al dente (8-10 minutes). Drain and cool.
  3. Step 3: Prep the Fresh Ingredients - Slice green onions, mince shallot and garlic, chop jalapeño and cilantro, crumble cotija cheese.
  4. Step 4: Make the Creamy Dressing - Combine sour cream, mayonnaise, garlic, lime juice, smoked paprika, chili powder, salt, and pepper, whisk until smooth.
  5. Step 5: Assemble the Salad - In a bowl, combine pasta, corn, fresh ingredients, and dressing, toss to combine.
