- Preheat your grill to medium-high heat, around 400°F (200°C).

- Once cooled, remove kernels from the cob and place in a large bowl.
- Add diced cucumber, chopped red onion, and cilantro to the corn.
- In a separate bowl, whisk together Greek yogurt, mayonnaise, garlic, lime juice, chili powder, salt, and pepper.
- Combine the creamy dressing with the corn mixture and toss to coat.
- Chill for at least 30 minutes before serving. Garnish with cilantro and chili powder if desired.
