- Preheat your oven to 200°C (400°F).
- Slice the spaghetti squash in half lengthwise, scoop out the seeds, drizzle with olive oil, sprinkle with salt, and place cut-side up on a baking sheet. Roast for 40 minutes.
- Heat a tablespoon of olive oil in a skillet over medium heat, add minced garlic and sauté for 1-2 minutes, then fold in fresh spinach and cook until wilted.
- Lower the heat, add chopped artichokes, cream cheese, mayonnaise, grated Parmesan, and mozzarella to the skillet, mixing well until creamy.
- Gently scrape the roasted squash strands, fill each half with the creamy mixture, and top with an extra sprinkle of Parmesan.
- Return the stuffed squash to the oven and bake for an additional 20-25 minutes until filling is bubbly and tops are golden-brown.
