Ingredients
  

For the Chicken
  • 1 lb Chicken Breast or tofu for vegetarian option
  • 2 Tbsp Olive Oil or sesame oil for extra flavor
For the Noodles
  • 8 oz Noodles rice noodles, soba, or gluten-free noodles
For the Vegetables
  • 2 cups Broccoli Florets or bell peppers/snap peas as alternatives
For the Sauce
  • 4 cloves Garlic minced, fresh preferred
  • 3 Tbsp Soy Sauce or gluten-free soy sauce
  • 1 Tbsp Chili Paste adjust to spice preference
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Instructions
  1. Bring a large pot of water to a boil and cook noodles for 8-10 minutes until slightly undercooked. Drain and rinse under cold water.
  2. Heat olive oil in a skillet over medium heat until shimmering, about 1-2 minutes.
  3. Sauté minced garlic in the hot oil for about 30 seconds, being careful not to burn it.
  4. Add sliced chicken breast to the skillet and cook for 5-7 minutes until golden brown and juices run clear.
  5. Stir in broccoli florets and cook for 3-4 minutes until bright green and tender-crisp.
  6. Pour in soy sauce and chili paste, tossing to coat the chicken and broccoli evenly for about 1 minute.
  7. Fold in the cooked noodles and mix for 1-2 minutes until everything is well combined and warmed through.
  8. Season with salt and pepper to taste, serve in bowls, and optionally garnish with sesame seeds or green onions.
