For the Pasta
  • 8 ounces Farfalle Pasta or rotini/penne for variety
  • 2 tablespoons Olive Oil for seasoning
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For the Salad
  • 1 medium Red Onion use half for milder flavor
  • 2 stalks Spring Onions
  • 1 large Cucumber diced
  • 1 cup Cherry Tomatoes halved
  • 1/4 cup Fresh Parsley roughly chopped
  • 1/4 cup Fresh Dill roughly chopped
For the Dressing
  • 1 cup Vegan Yogurt unsweetened
  • 2 tablespoons Vegan Mayo
  • 2 tablespoons Chili Crisp or sriracha as substitute
  • 1 clove Garlic minced
  • 1 tablespoon Lemon Juice
  • 1/2 teaspoon Red Pepper Flakes to taste
  • a pinch Salt

Method
 

Cooking Instructions
  1. Preheat oven to 400°F (200°C). Boil salted water and cook farfalle pasta until al dente, about 10-12 minutes. Drain and toss with olive oil, smoked paprika, garlic powder, dried oregano, salt, and black pepper.
  2. Spread pasta on a lined baking tray and bake for 30 minutes, tossing halfway until golden brown and crunchy.
  3. Prepare fresh vegetables by combining them in a large mixing bowl.
  4. Make dressing by whisking together all dressing ingredients until smooth.
  5. Add cooled baked pasta to the bowl with vegetables, drizzle with dressing, and toss gently.
  6. Serve in a large dish and garnish with extra spring onions and crispy pasta pieces.
