  • 2 cups Corn (Fresh/Frozen) thaw frozen corn beforehand
  • 1 medium Jalapeño (minced) remove seeds for a milder kick
  • 1/4 cup Cilantro (chopped) substitute with parsley if preferred
  • 1/4 cup Green Onions (chopped) red onions work for a sharper taste
For the Dressing
  • 1/2 cup Mayonnaise swap for Greek yogurt for a lighter option
  • 2 tablespoons Lime Juice use fresh lime juice for the best flavor
  • 1 tablespoon Sugar adjust to taste; omit if desired
  • 1 teaspoon Garlic Powder fresh minced garlic can also be used
  • to taste Salt and Pepper feel free to adjust to your liking

Instructions
  1. In a large mixing bowl, combine the cole slaw mix, sweet corn, minced jalapeños, chopped cilantro, and sliced green onions. Toss gently until well-distributed.
  2. In a separate bowl, whisk together mayonnaise, lime juice, sugar, garlic powder, salt, and pepper until smooth and creamy.
  3. Drizzle the dressing over the slaw mixture, gently folding until everything is evenly coated without overmixing.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Once chilled, stir gently and serve in a bowl.
