Ingredients
  

Marinade
  • 500 grams Boneless Chicken Breasts
  • 1 cup Greek Yogurt Regular yogurt can be substituted
  • 2 tablespoons Vegetable Oil Olive oil is a good substitute
  • 2 tablespoons Lemon Juice Lime juice can be used
  • 1 tablespoon Grated Ginger Ground ginger is an alternative
  • 1 tablespoon Grated Garlic Powdered garlic may be handy
Spices
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon Paprika Smoked paprika can be used
  • 1 teaspoon Kashmiri Red Chili Powder Regular chili powder is acceptable
  • 1 teaspoon Ground Coriander Can be omitted if missing
  • 1/2 teaspoon Cayenne Powder Omit for milder taste
  • 1/4 teaspoon Ground Cardamom Use sparingly or omit
  • to taste Sea Salt
  • to taste Black Pepper

  • 1 cup Red Onion Cut into chunks
  • 1 cup Bell Peppers Cut into chunks

Method
 

Preparation
  1. In a mixing bowl, combine Greek yogurt, vegetable oil, lemon juice, grated ginger, grated garlic, and all the spices. Whisk until smooth. Cut boneless chicken breasts into equal pieces, add to the marinade, and coat well. Cover and refrigerate for at least 20 minutes.
  2. Soak wooden skewers in water for at least 30 minutes. After marination, thread marinated chicken pieces onto skewers, alternating with chunks of red onion and bell peppers. Arrange skewers on a wire rack over a lined baking sheet.
  3. Preheat your broiler to 500°F. Place skewers under the broiler and cook for 10-12 minutes, turning halfway through until slightly charred and internal temperature reaches 165°F.
  4. Let skewers rest for a few minutes. Slide the chicken off using a fork. Serve alongside basmati rice or warm naan.
