- Start by boiling 5 cups of water until it reaches just off boiling, around 200-212°F. Add 6 hibiscus tea bags to the hot water and steep for 4 minutes.
- After 4 minutes, add the fresh grapefruit rind and whole cloves to the brewed hibiscus tea. Allow these ingredients to steep for an additional 3 minutes.
- Carefully remove the tea bags, grapefruit rind, and cloves. While the tea is still warm, stir in your choice of honey or sweetener until fully dissolved.
- Transfer the sweetened hibiscus tea to the refrigerator and chill for at least 2 hours.
- Stir in freshly squeezed grapefruit juice before serving. Adjust the sweetness again if desired.
- Prepare glasses filled with ice and pour the mocktail over the ice, filling each glass halfway. Top off each drink with sparkling water.
- Garnish with a sprig of mint and a grapefruit wedge before serving.
