Step-by-Step Instructions
  1. Cook the macaroni in salted boiling water until al dente (8-10 minutes) and boil the egg for 10 minutes. Drain and cool.
  2. Finely chop the onion and roasted red pepper, and grate the carrot. Set aside in a large bowl.
  3. Combine cooled macaroni, chopped vegetables, peeled and chopped boiled egg, lemon juice, and mayonnaise in the mixing bowl.
  4. Season the salad with dried oregano, salt, and black pepper to taste, mixing thoroughly.
  5. Chill the salad in the refrigerator for at least one hour to enhance flavors.
  6. Serve the salad chilled, transferring it to a large serving bowl.
