  • 2 fillets Salmon skinless, about 6 oz each
  • 1 tbsp Olive Oil or avocado oil
  • to taste Salt and Pepper
  • 1 tsp Garlic Powder/Italian Seasoning or fresh herbs
For the Orzo
  • 2 tbsp Butter
  • 3 cloves Garlic minced
  • 1 small Shallots finely chopped
  • 0.25 cup White Wine or vegetable broth
  • 2.5 cups Chicken Broth or vegetarian broth
  • 1.5 cups Orzo Pasta
  • 0.5 cup Heavy Cream or half-and-half
  • 0.5 cup Grated Parmesan Cheese plus extra for garnish
  • 1 tbsp Fresh Lemon Juice
  • 2 cups Fresh Baby Spinach packed
Optional Add-ins
  • 0.5 cup Diced Bell Peppers
  • 0.5 cup Cherry Tomatoes halved

  • Lemon Zest
  • Chopped Fresh Parsley

Method
 

Step-by-Step Instructions
  1. Season both sides of salmon fillets with salt, pepper, and garlic powder or Italian seasoning. Let sit for 10 minutes.
  2. Heat olive oil in skillet over medium-high heat. Add salmon skin-side down, and sear for 5 minutes. Flip and cook for an additional 30-45 seconds.
  3. In the same skillet, reduce heat to medium, melt butter and add garlic and shallots. Sauté for 1-2 minutes until fragrant.
  4. Deglaze the skillet with white wine, scraping up browned bits. Simmer for about a minute.
  5. Add chicken broth and bring to a simmer. Stir in orzo pasta and cook for about 10 minutes.
  6. Stir in heavy cream, parmesan cheese, and lemon juice, simmer for 2-3 minutes.
  7. Gently fold in seared salmon and spinach, allowing spinach to wilt for about 2-3 minutes.
  8. Plate the dish, garnishing with extra parmesan, lemon zest, and parsley.
