Ingredients
  

For the Meat Mixture
  • 500 g Ground Beef Ideal fat content of 80/20 or 85/15
  • 1 medium Onion Grated and squeezed
  • 2 cloves Garlic Minced
  • 1 tbsp Paprika Use smoked paprika for extra kick
  • 1 tsp Oregano Dried
  • 1 tsp Salt To taste
  • 1 tsp Black Pepper To taste
For the Roasted Veggies
  • 2 medium Tomatoes Roasted
  • 2 medium Green Peppers Sivri or banana peppers
For the Topping
  • 1 cup Garlic Sauce Creamy blend of mayonnaise and sour cream
  • 1 medium Sumac Onion Red onion tossed with sumac, olive oil, and lemon juice

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F) and prepare a baking tray lined with parchment paper.
  2. In a food processor, combine the ground beef, grated onion, minced garlic, paprika, oregano, salt, and black pepper. Process until smooth and sticky.
  3. Transfer half of the meat mixture onto the parchment, shape into a thin rectangle, then roll tightly into a log. Repeat with the remaining mixture.
  4. Place both kebab logs onto the baking tray with chopped tomatoes and green peppers. Bake for about 30 minutes until cooked through.
  5. Remove parchment and, if desired, slice thinly. Broil for an additional 3-5 minutes until crisp.
  6. While kebabs are broiling, whisk together mayonnaise and sour cream for the garlic sauce and toss red onions with sumac.
  7. Assemble your kebabs in pita or flatbread with roasted veggies and garlic sauce.
