Method
 

Step‑by‑Step Instructions
  1. In a medium-sized bowl, whisk together soy sauce, water, and brown sugar until fully blended and the sugar dissolves.
  2. Add minced garlic, chopped fresh rosemary, and ground black pepper.
  3. Reserve half of the marinade for basting later, and pour the remaining marinade into a resealable bag.
  4. Add bone-in pork chops, ensuring they’re well-coated, then seal and refrigerate for at least 3 hours, preferably overnight.
  5. Preheat grill to medium heat, aiming for a temperature of 375-400°F.
  6. Remove pork chops from marinade, let excess marinade drip off, and discard used marinade.
  7. Place the chops on the grill, cooking for 4-5 minutes on one side.
  8. In the final 2-3 minutes, brush reserved marinade over the chops every minute.
  9. Check the internal temperature aiming for 145°F; let pork chops rest for 5 minutes before serving.
