  • 1 pound boneless, skinless chicken thighs can substitute with chicken breasts
  • 2 tablespoons lime juice fresh for best flavor

  • 1/2 teaspoon ground cumin optional

  • 1/2 teaspoon black pepper
For the Corn Mixture
  • 1 cup sweet corn frozen corn works great
  • 1/2 cup red onion diced
  • 1/2 cup sour cream can substitute with Greek yogurt
  • 1/4 cup mayonnaise consider plant-based for dairy-free
  • 1/4 cup Cotija cheese can substitute with feta
For Serving
  • 2 cups cooked rice any variety works
  • 1/4 cup cilantro optional
  • 2 lime wedge for serving

Method
 

Preparation Steps
  1. Marinate the chicken by whisking lime juice, avocado oil, chili powder, cumin, garlic powder, salt, and pepper in a bowl. Coat chicken thighs in marinade and refrigerate for at least 15 minutes.
  2. Heat a skillet over medium-high heat, add avocado oil, and sear the marinated chicken for about 8-10 minutes per side until golden brown and cooked through.
  3. In a mixing bowl, combine sweet corn, red onion, sour cream, mayonnaise, and Cotija cheese. Season with salt and pepper to taste.
  4. Warm up the cooked rice and fluff it gently with a fork. Mix in fresh chopped cilantro if desired.
  5. Assemble the bowls by placing rice at the bottom, topping with sliced chicken, and adding the corn mixture.
  6. Garnish with additional Cotija cheese and cilantro, serve with lime wedges.
