Step-by-Step Instructions for Uptown Meatloaf
  1. Preheat your oven to 400°F (200°C). Gather your ingredients while the oven warms up.
  2. Coarsely grind the beef sirloin and pork shoulder with the fennel seeds.
  3. In a large bowl, mix the ground meats with eggs, breadcrumbs, parsley, onion, garlic, V-8 juice, wine, salt, and pepper until just combined.
  4. Line a baking sheet with parchment paper, spread the meat mixture evenly forming a rectangular shape.
  5. Sprinkle the mixture with sun-dried tomatoes, basil, and 3/4 of the mozzarella.
  6. Roll the meatloaf jelly-roll style, sealing the ends.
  7. Place the rolled meatloaf in the oven and bake for about 1 hour.
  8. Halfway through baking, sprinkle the remaining mozzarella on top and return to the oven.
  9. Allow the meatloaf to rest for 10 minutes before slicing.
  10. Slice, serve warm, and enjoy!
