Step-by-Step Instructions for Uptown Meatloaf
- Preheat your oven to 400°F (200°C). Gather your ingredients while the oven warms up.
- Coarsely grind the beef sirloin and pork shoulder with the fennel seeds.
- In a large bowl, mix the ground meats with eggs, breadcrumbs, parsley, onion, garlic, V-8 juice, wine, salt, and pepper until just combined.
- Line a baking sheet with parchment paper, spread the meat mixture evenly forming a rectangular shape.
- Sprinkle the mixture with sun-dried tomatoes, basil, and 3/4 of the mozzarella.
- Roll the meatloaf jelly-roll style, sealing the ends.
- Place the rolled meatloaf in the oven and bake for about 1 hour.
- Halfway through baking, sprinkle the remaining mozzarella on top and return to the oven.
- Allow the meatloaf to rest for 10 minutes before slicing.
