Step-by-Step Instructions
  1. In a large mixing bowl, whisk together the chopped red onion, finely minced green chili, ground turmeric, kosher salt, and chopped cilantro. Gradually add milk or water, then incorporate the eggs. Whisk until well-combined and frothy.
  2. Take your slices of bread and dip them into the egg mixture, ensuring each piece is soaked thoroughly. Let them sit briefly to soak up maximum flavor, about 1-2 minutes per side.
  3. Place a non-stick or cast iron pan over medium heat and add a splash of oil. After a minute, when the oil is shimmering, add the soaked bread slices in the pan.
  4. Cook the bread slices for approximately 1-2 minutes until golden brown and crispy. Carefully flip them over, adding a spoonful of the remaining onion mixture on top of each slice.
