Ingredients
  

For the Marinade
  • 3 cloves Garlic minced
  • 1 inch Fresh Ginger grated
  • 1 teaspoon Ground White Pepper
  • 2 tablespoons Brown Sugar
  • 1 tablespoon Fresh Lime Juice about 1 large lime
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Tamari Sauce gluten-free
  • 1 tablespoon Oyster Sauce
For the Skewers
  • 1 pound Pork Shoulder cut into ½ inch thick pieces
  • 8 pieces Bamboo Skewers soaked for 2-3 hours
  • 2 tablespoons Toasted Sesame Oil for basting
For the Dipping Sauce
  • 1 cup Spicy Peanut Sauce

Method
 

Preparation
  1. In a small bowl, combine minced garlic, grated ginger, ground white pepper, brown sugar, lime juice, fish sauce, tamari, and oyster sauce. Whisk until well blended.
  2. Cut the pork shoulder into ½ inch thick pieces and place them in a shallow dish. Pour the marinade over the pork and refrigerate for at least 3 hours.
  3. Soak bamboo skewers in water for 2-3 hours. After marinating, thread pork pieces onto soaked skewers.
  4. Preheat the grill to medium heat (approximately 350°F). Lightly oil the grill grates.
  5. Place the skewers on the grill, baste with sesame oil, and grill for 3-4 minutes per side until cooked through.
  6. Remove grilled skewers, let them rest, and serve with spicy peanut sauce and lime wedges.
