- In a small bowl, combine minced garlic, grated ginger, ground white pepper, brown sugar, lime juice, fish sauce, tamari, and oyster sauce. Whisk until well blended.
- Cut the pork shoulder into ½ inch thick pieces and place them in a shallow dish. Pour the marinade over the pork and refrigerate for at least 3 hours.
- Soak bamboo skewers in water for 2-3 hours. After marinating, thread pork pieces onto soaked skewers.
- Preheat the grill to medium heat (approximately 350°F). Lightly oil the grill grates.
- Place the skewers on the grill, baste with sesame oil, and grill for 3-4 minutes per side until cooked through.
- Remove grilled skewers, let them rest, and serve with spicy peanut sauce and lime wedges.
