Method
 

Preparation
  1. In a small bowl, whisk together the olive oil, minced garlic, dried oregano, basil, parsley, salt, black pepper, and crushed red pepper flakes.
  2. Rub the marinade over each pork chop, ensuring every surface is coated. Refrigerate for at least 30 minutes to 2 hours.
  3. Preheat your grill to medium-high heat (around 400°F). Lightly oil the grill grates.
Grilling
  1. Place the marinated pork chops on the grill and cook for 4-5 minutes without moving.
  2. Flip the chops and top them with slices of fresh mozzarella, cherry tomatoes, and shallots. Close the grill lid.
  3. Cook for another 4-6 minutes until the cheese melts and the toppings roast.
  4. Check internal temperature, ensuring it reaches at least 145°F (63°C).
  5. Remove from the grill and let rest for 5 minutes before serving.
  6. Garnish with herbs if desired, and serve with grilled vegetables or salad.
