  • 1 pinch Sugar Optional, to balance soy sauce's saltiness
  • 2 scallions Scallion Finely chopped

Method
 

Step-by-Step Instructions
  1. Trim about 1 inch off the roots of the fresh Enoki mushrooms and rinse gently under cold water.
  2. Gently tear the rinsed Enoki mushrooms into bite-sized bundles and arrange on a plate.
  3. Blanch the mushroom bundles in boiling water for 1 minute, then drain.
  4. Heat oil in a small saucepan, add minced garlic and sauté for about 10 seconds.
  5. Stir in soy sauce and sugar, bring to a gentle boil, then add scallions and stir.
  6. Drizzle the sauce over the blanched Enoki mushrooms and serve immediately.
