Method
 

Instructions
  1. Pat the cubed chicken dry with paper towels and sprinkle salt, paprika, and black pepper over the chicken, ensuring even coating.
  2. Heat 1 tablespoon of oil in a large skillet over medium heat until it shimmers.
  3. Add the seasoned chicken cubes to the skillet in a single layer and cook undisturbed for about 4-5 minutes until golden brown.
  4. Flip the chicken pieces over and cook for another 4-5 minutes until lightly browned and cooked through.
  5. Reduce the heat to low to prevent burning when adding the dairy.
  6. Stir in 1 cup of cottage cheese and warm for 1-2 minutes while stirring.
  7. Gradually add ⅓ cup of grated Parmesan cheese and stir continuously until melted and combined.
  8. Taste the sauce and adjust seasoning with more salt or black pepper as needed.
  9. Let the chicken and sauce simmer together for about 2-3 minutes over low heat.
  10. Remove from heat and let rest for a couple of minutes before serving.
