Ingredients
  

For the Meatloaf
  • 1 lb Ground Chicken or ground turkey
  • 1 cup Breadcrumbs panko or gluten-free
  • 2 Eggs large
  • 1/2 cup Milk or non-dairy alternative
For the Flavor
  • 2 tbsp Dijon Mustard or yellow mustard
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 2 tbsp Dried Parsley or thyme/Italian seasoning
For the Filling
  • 4 oz Swiss Cheese or provolone/mozzarella
  • 4 oz Deli Ham or leftover baked ham
For the Optional Topping
  • 1/4 cup Breadcrumbs for topping
  • 2 tbsp Butter melted
  • 1 tbsp Dijon Mustard for drizzling

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and grease a loaf pan lightly.
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, eggs, milk, and Dijon mustard.
  3. Add garlic powder, onion powder, salt, pepper, paprika, and dried parsley, mixing gently until just combined.
Assembly
  1. Spread half of the meat mixture into the bottom of the prepared loaf pan.
  2. Layer thin slices of ham over this base, followed by the Swiss cheese.
  3. Cover with the remaining chicken mixture, sealing the edges well.
Baking
  1. Bake in the preheated oven for 45–55 minutes, until the internal temperature reaches 165°F (74°C).
  2. Optionally, sprinkle breadcrumbs and melted butter over the top in the last 5 minutes for a crispy finish.
  3. Once done, let the meatloaf rest for about 10 minutes before slicing.
Serving
  1. Slice gently and serve warm alongside your favorite vegetables or salad.
