- In a large mixing bowl, combine ground beef, minced garlic, grated ginger, Chinese 5-spice powder, low-sodium soy sauce, Thai chili sauce, honey, and ketchup. Mix thoroughly.
- Heat 1 tablespoon of toasted sesame oil in a skillet over medium-high heat. Add the beef mixture and cook for about 5-7 minutes until browned.
- While the beef cooks, prepare fresh fillings by julienning the cucumbers and chopping the cilantro, basil, and green onions, and crushing the peanuts.
- Warm tortillas in a dry skillet over low heat for 30 seconds on each side, or soak rice paper in warm water for 10-15 seconds until pliable.
- Lay a warm tortilla or soaked rice paper sheet on a clean surface. Add a spoonful of beef mixture, then layer on cucumbers, cilantro, basil, green onions, and peanuts.
- Fold the sides of the tortilla or rice paper and roll tightly from the bottom up. Place seam-side down on a plate and serve immediately.
