Step-by-Step Instructions
  1. Caramelize Onions: Heat 2 tablespoons of unsalted butter and 1 tablespoon of olive oil in a large skillet over medium heat. Add thinly sliced yellow onions and a pinch of salt. Cook for 15-20 minutes, stirring occasionally, until golden brown.
  2. Prepare Rice: Mix cooked basmati rice with 1 teaspoon of ground turmeric and salt in a bowl. Transfer half caramelized onions to a plate and layer seasoned rice over reserved onions in skillet.
  3. Crisp the Rice: Set heat to medium-high and cook rice undisturbed for 6-8 minutes until golden brown on bottom.
  4. Steam Rice: Lower heat to medium-low, cover skillet with lid or foil, and steam rice for 5 minutes.
  5. Assemble Bowl: Spoon crispy rice into bowls, top with reserved caramelized onions, crumbled feta, parsley, dill, and mint. Squeeze lemon juice on top.
