Marinating and Baking
- In a mixing bowl, whisk together minced garlic, red wine vinegar, lemon juice and zest, Greek yogurt, olive oil, oregano, paprika, salt, and pepper until smooth. Add chicken thighs, cover and refrigerate for 2-24 hours.
- Soak wooden skewers in water for 30 minutes to prevent burning and cut potatoes into thick slices.
- Thread the marinated chicken onto the soaked skewers, densely packing them together for flavor and moisture.
- Preheat the oven to 400°F (200°C). Place skewers in a baking dish with an inch of water at the bottom. Bake for 1 to 1½ hours until the internal temperature reaches 165°F (75°C).
- Let the skewers rest for 10-15 minutes, slice chicken off skewers, and serve in warm pita bread with fresh vegetables and tzatziki sauce.
