Preparation Steps
- In a large bowl, combine your chicken pieces with chicken bouillon powder, white pepper, and enough water to submerge them. Let sit for about 10 minutes.
- In a separate mixing bowl, whisk together the light soy sauce, oyster sauce, rice vinegar, ketchup, honey, brown sugar, and a splash of water.
- In another bowl, crack in the large eggs and whisk them. Blend in the all-purpose flour, cornstarch, baking powder, salt, water, and a splash of vegetable oil until smooth.
- Heat vegetable oil in a deep skillet over medium-high heat until it reaches 365°F. Dip each marinated chicken piece into the batter and fry for about 3 minutes until light golden brown.
- Increase the oil temperature to 375°F and fry the chicken pieces for an additional 2 minutes until very crispy.
- In a clean skillet, sauté minced garlic over medium heat until fragrant, then pour in the sauce mixture and bring to a simmer.
- Toss the freshly fried chicken in the thickened sauce until well-coated and serve hot, garnished with toasted sesame seeds and chopped green onions.
