Method
 

Steps
  1. Begin by placing 6 fresh mint leaves at the bottom of a tall glass. Muddle gently to release oils.
  2. Add 30ml of apple juice, 20ml of lime juice, and 15ml of elderflower cordial. Stir gently to combine.
  3. Fill the glass with freshly crushed ice, packing it tightly.
  4. Stir the mixture gently with a bar spoon for about 10-15 seconds.
  5. Pour 40ml of soda water over the mixture, allowing bubbles to rise.
  6. Garnish with a sprig of fresh mint on the rim of the glass.
