  • 6 cups Rice Chex Cereal Ensure it’s gluten-free.
  • 1/2 cup Sweetened Condensed Milk Can be replaced with evaporated milk for a different texture.
For the Coating
  • 1 cup White Chocolate Chips Swap for milk chocolate or dark chocolate if desired.
  • 1/4 cup Unsalted Butter Coconut oil can be used for a dairy-free option.
  • 1 box Instant Pistachio Pudding Mix Can use vanilla or banana for a twist.
  • 1/2 teaspoon Vanilla Extract Optional but recommended.
  • 1 1/2 cups Powdered Sugar Coconut sugar can be used as an alternative.
For the Garnish
  • 1/4 cup Crushed Pistachios Optional for extra crunch.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, pour in 6 cups of Rice Chex cereal and set it aside.
  2. In a microwave-safe bowl, combine 1/4 cup of unsalted butter, 1 cup of white chocolate chips, and 1/2 cup of sweetened condensed milk. Microwave in 30-second intervals, stirring until smooth and glossy—about 1-2 minutes.
  3. Whisk in 1 (3.4 oz) box of instant pistachio pudding mix and 1/2 teaspoon of vanilla extract into the melted chocolate mixture.
  4. Pour the warm chocolate mixture over the prepared Rice Chex cereal. Gently fold the mixture together until each piece of cereal is fully coated.
  5. Transfer your coated cereal into a large zip-top bag. Add 1 1/2 cups of powdered sugar to the bag, seal it tightly, and shake vigorously until all the cereal pieces are coated.
  6. If desired, add 1/4 cup of crushed pistachios into the bag and give it a gentle shake. Transfer the Pistachio Puppy Chow to a serving bowl.
