Ingredients
  

For the Chicken Marinade
  • 2 lbs Boneless, skinless chicken thighs
  • 5 cloves Garlic Fresh is best
  • 1/4 cup Soy sauce Use tamari for gluten-free
  • 2 tbsp Lime juice Freshly squeezed
  • 2 tbsp Olive oil Avocado oil can be used
  • 1 tsp Cumin
  • 1 tsp Paprika Smoked paprika adds depth
  • 1 tsp Dried oregano Substitute with fresh if desired
  • 1/2 tsp Black pepper Freshly cracked is best
For the Green Sauce
  • 2 medium Jalapeños Adjust according to spice preference
  • 1 cup Fresh cilantro
  • 1/4 cup Green onions Chives can be used as alternative
  • 4 cloves Garlic
  • 1/2 cup Mayonnaise Avocado can substitute
  • 1/2 cup Greek yogurt Non-dairy alternatives work too
  • 2 tbsp Lime juice
  • 1 tsp Salt Adjust to taste
  • 1/2 tsp Black pepper Adjust to taste

Method
 

Step-by-Step Instructions
  1. In a blender, combine garlic, soy sauce, lime juice, olive oil, cumin, paprika, oregano, and black pepper until smooth.
  2. Place chicken thighs in a zip-top bag and pour the marinade over them. Seal the bag and refrigerate for 8 to 24 hours.
  3. In a blender, add jalapeños, cilantro, green onions, garlic, mayonnaise, Greek yogurt, lime juice, salt, and black pepper. Blend until smooth.
  4. Gradually drizzle in olive oil to achieve a creamy consistency. Transfer to a container and refrigerate.
  5. Preheat your grill to medium-high heat (around 350°F). Remove chicken from the bag and grill for 5 to 6 minutes per side until golden brown and reaches 165°F.
  6. If roasting, preheat your oven to 500°F, arrange chicken in a baking pan, cover with foil, roast for 30 minutes, then cook uncovered for another 15 minutes.
  7. Let chicken rest for a few minutes, slice, and serve with green sauce. Pair with rice, grilled vegetables, or tacos.
