Method
 

Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and dry the sweet potatoes, then slice them into evenly sized fries or wedges, about ¼ to ½ inch thick.
  3. In a large mixing bowl, toss the sweet potatoes with olive oil, minced garlic, paprika, Italian seasoning, salt, and black pepper until evenly coated.
  4. Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet, leaving space between each fry.
  5. Roast the sweet potatoes for 15 minutes, then flip them using a spatula and roast for an additional 10-15 minutes until tender and golden.
  6. Remove from the oven and immediately sprinkle grated Parmesan cheese over the hot fries, then return to the oven for 2-3 minutes to melt the cheese.
  7. Garnish with chopped parsley before serving. Enjoy warm alongside your favorite dipping sauce.
