For the Gratin
  • 1 lb raw, peeled, and deveined shrimp
  • 4 cups fresh spinach or thawed frozen spinach
  • 8 oz cream cheese softened
  • 2 cups shredded cheese e.g., mozzarella and cheddar
Seasonings
  • 2 cloves fresh minced garlic or garlic powder as a substitute
  • to taste salt
  • to taste pepper
  • 1 tbsp Old Bay seasoning or any seafood seasoning
Optional Toppings
  • 1/2 cup breadcrumbs panko recommended for crunch
  • 2 tbsp freshly chopped parsley or dried parsley

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C). Prepare a baking dish by lightly greasing it or lining it with parchment paper.
  2. In a large skillet over medium heat, add fresh spinach along with a splash of water. Sauté for about 2-3 minutes until wilted.
  3. In a mixing bowl, combine softened cream cheese, minced garlic, Old Bay seasoning, salt, and pepper. Blend until smooth and creamy, then fold in sautéed spinach and shrimp.
  4. Sprinkle half of the shredded cheese into the bottom of the baking dish. Spoon the shrimp and spinach mixture on top, then sprinkle the remaining cheese on top.
  5. Bake for 25-30 minutes until the cheese is golden and bubbly, and the shrimp is opaque and tender.
  6. Optional: Sprinkle breadcrumbs on top during the last 5 minutes of baking. Let cool for a few minutes, then garnish with parsley before serving.

Notes

Make sure the shrimp is thawed and patted dry before cooking. Properly sauté spinach to prevent sogginess in the gratin.
