- Preheat your oven to 350°F (175°C). Prepare a baking dish by lightly greasing it or lining it with parchment paper.
- In a large skillet over medium heat, add fresh spinach along with a splash of water. Sauté for about 2-3 minutes until wilted.
- In a mixing bowl, combine softened cream cheese, minced garlic, Old Bay seasoning, salt, and pepper. Blend until smooth and creamy, then fold in sautéed spinach and shrimp.
- Sprinkle half of the shredded cheese into the bottom of the baking dish. Spoon the shrimp and spinach mixture on top, then sprinkle the remaining cheese on top.
- Bake for 25-30 minutes until the cheese is golden and bubbly, and the shrimp is opaque and tender.
- Optional: Sprinkle breadcrumbs on top during the last 5 minutes of baking. Let cool for a few minutes, then garnish with parsley before serving.

Notes
Make sure the shrimp is thawed and patted dry before cooking. Properly sauté spinach to prevent sogginess in the gratin.
