Step-by-Step Instructions
  1. Start by slicing the 2 lb chicken breast into 1-inch strips for uniform cooking.
  2. Slice the 1 red, 1 yellow, and 1 green bell pepper into thin strips, and dice the large yellow onion and mince the 6 garlic cloves.
  3. Pour half of the 24 oz salsa into the bottom of your crockpot, layer half of the sliced peppers and onions, and add minced garlic.
  4. Place the sliced chicken on top, sprinkle the fajita seasoning and chili powder, mixing slightly with a spatula.
  5. Pour the remaining salsa on top and layer the rest of the veggies, then cover the crockpot.
  6. Squeeze the juice of 2 tbsp lime over the top, gently stirring to combine.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  8. Once done, shred the chicken in the crockpot and allow it to stay warm before serving.
