- Start by slicing the 2 lb chicken breast into 1-inch strips for uniform cooking.
- Slice the 1 red, 1 yellow, and 1 green bell pepper into thin strips, and dice the large yellow onion and mince the 6 garlic cloves.
- Pour half of the 24 oz salsa into the bottom of your crockpot, layer half of the sliced peppers and onions, and add minced garlic.
- Place the sliced chicken on top, sprinkle the fajita seasoning and chili powder, mixing slightly with a spatula.
- Pour the remaining salsa on top and layer the rest of the veggies, then cover the crockpot.
- Squeeze the juice of 2 tbsp lime over the top, gently stirring to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once done, shred the chicken in the crockpot and allow it to stay warm before serving.
