Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Wash and pierce sweet potatoes. Bake for 45-50 minutes until soft.
  2. Remove from oven, cool for 10-15 minutes, peel and mash sweet potatoes until smooth.
  3. Sift together flour, sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt in a bowl.
  4. In another bowl, combine mashed sweet potato, eggs, vegetable oil, buttermilk, and vanilla. Whisk until smooth.
  5. Gently fold dry ingredients into wet ingredients until just combined. Do not overmix.
  6. Pour batter into a lined loaf pan and bake at 350°F (180°C) for 1 hour, or until a toothpick comes out clean.
  7. In a bowl, whisk together powdered sugar, maple syrup, and bourbon for glaze. Add water for desired consistency.
  8. Cool bread for 10 minutes then turn out onto a wire rack. Drizzle with glaze and decorate with cinnamon and pecans.
