Preparation
- Preheat your oven to 350°F (175°C). Grease and flour three 8-inch cake pans, lining the bottom with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a stand mixer, cream butter and orange zest until smooth. Gradually add sugar and mix until fluffy.
- Add eggs one at a time and blend in vanilla extract.
- Alternate adding the dry mixture and the milk with fresh orange juice, mixing gently until just combined.
- Toss cranberries in 1 tablespoon of flour and then fold them into the batter.
- Divide batter into prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Beat butter and orange zest for frosting until creamy. Add cream cheese, then mix in powdered sugar and vanilla until fluffy.
- Assemble the cake, spreading frosting between layers and on top and sides.
- Decorate with fresh cranberries, orange slices, and thyme sprigs.
