  • 1 pound Brussels Sprouts trimmed and halved
For the Creamy Sauce
  • 1/2 cup Mayonnaise or Greek yogurt
  • 1/4 cup Sour Cream or more mayonnaise
  • 2 tablespoons Lime Juice or lemon juice
  • 1 teaspoon Chili Powder or smoked paprika
For the Toppings
  • 1/2 cup Cotija Cheese or feta cheese
  • 1/4 cup Fresh Cilantro chopped

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Trim the ends of your Brussels sprouts and slice each one in half. Toss them with olive oil, salt, and pepper.
  3. Spread the Brussels sprouts on a baking sheet and roast for 20-25 minutes, turning halfway.
  4. In a bowl, whisk together the mayonnaise, sour cream, lime juice, and chili powder for the sauce.
  5. Once roasted, coat the Brussels sprouts in the creamy sauce while still hot.
  6. Transfer to a serving dish and sprinkle with cotija cheese and cilantro.
  7. Serve warm or at room temperature alongside tacos or grilled meats.
