  • 1 medium English Cucumber peeled and chopped
  • 1/4 cup Fresh Parsley chopped
  • 1/2 cup Feta Cheese crumbled
For the Dressing
  • 1/4 cup Extra-Virgin Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon Oregano dried

Step-by-Step Instructions
  1. Boil a large pot of salted water and cook the cheese tortellini according to package instructions, about 3-5 minutes. Drain and let cool.
  2. Chop the yellow bell pepper, slice the red onion, quarter the cherry tomatoes, and chop the English cucumber. Place in a large mixing bowl.
  3. Combine the cooled tortellini with the vegetables. Drizzle with olive oil and red wine vinegar, then toss to combine.
  4. Season with oregano, sea salt, and black pepper. Toss again and add fresh parsley.
  5. Crumble feta over the salad and toss gently to incorporate.
