Tzatziki Preparation
- In a mixing bowl, combine Greek yogurt, diced cucumber, and minced garlic. Add fresh dill, lemon juice, and olive oil, stirring until smooth. Season with salt and pepper to taste. Cover and refrigerate for at least 15 minutes.
Patties Preparation
- In a large bowl, add ground chicken, diced red onion, minced garlic, chopped herbs, dried spices, salt, and pepper. Mix in breadcrumbs if using. Crack in the beaten egg and combine until just mixed.
Patties Shaping
- Form the mixture into patties, about 3 inches wide and 3/4 inch thick. Chill for about 10 minutes.
Patties Cooking
- Heat olive oil in a skillet over medium heat. Cook patties for about 5-6 minutes on each side until golden brown and cooked through.
Salad Preparation
- While the patties cook, prepare a salad with fresh spinach, diced cucumber, halved cherry tomatoes, sliced Kalamata olives, and red onion. Drizzle with olive oil and lemon juice, seasoning to taste.
Serving
- Serve the salad with two chicken patties on top, a dollop of tzatziki, and a sprinkle of fresh dill.
