Method
 

Step-by-Step Instructions for Mediterranean Baked Fish
  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with a splash of olive oil.
  3. Arrange halved cherry tomatoes, sliced bell pepper, and zucchini in the greased baking dish.
  4. Drizzle olive oil over the vegetables and add minced garlic, dried oregano, paprika, salt, and pepper. Toss to coat.
  5. Place white fish fillets on top of the seasoned vegetables and top each with lemon slices.
  6. Pour remaining olive oil over the fish and cover the dish with aluminum foil. Bake for 20-25 minutes.
  7. Optionally, remove the foil and broil for another 5-10 minutes for a crispy finish.
  8. Garnish with chopped parsley before serving.
