Ingredients
  

For the Mango Curd
  • 1 cup Unsalted Butter at room temperature
  • 1 cup Granulated Sugar can substitute with brown sugar
  • 3 large Eggs fresh
  • 1 cup Mango Pulp fresh or pureed
  • 2 tablespoons Lemon Juice fresh preferred
For the Vanilla Cupcakes
  • 2 cups All-Purpose Flour can substitute gluten-free flour
  • 2 teaspoons Baking Powder ensure it's fresh
  • 1 teaspoon Baking Soda
  • 1 teaspoon Fine Sea Salt or table salt
  • 1/2 cup Unsalted Butter at room temperature
  • 1/2 cup Vegetable Oil or vegan alternatives
  • 1 cup Granulated Sugar
  • 3 large Eggs fresh
  • 2 teaspoons Vanilla Extract or almond extract
  • 1 cup Milk or any plant milk
For the Cream Cheese Frosting
  • 8 oz Cream Cheese at room temperature
  • 1/2 cup Unsalted Butter at room temperature
  • 3 cups Powdered Sugar sifted
  • 1 teaspoon Vanilla Extract

Method
 

Mango Cupcake Instructions
  1. Blend ripe mango pieces into a smooth purée. In a saucepan over low heat, combine the purée with unsalted butter, granulated sugar, eggs, and lemon juice. Stir until the mixture thickens, about 10–15 minutes. Strain and cool.
  2. Preheat your oven to 350ºF (175ºC) and line a muffin tin with cupcake liners. In a bowl, whisk together flour, baking powder, baking soda, and sea salt.
  3. Cream together unsalted butter, vegetable oil, and sugar until fluffy. Mix in eggs and vanilla alternating with dry ingredients and milk. Be careful not to overmix.
  4. Fill cupcake liners about two-thirds full. Bake for 18–20 minutes or until a toothpick comes out clean. Cool in the pan for a few minutes before transferring to a wire rack.
  5. Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until fluffy.
  6. Hollow out centers of cooled cupcakes, fill with mango curd, and frost with cream cheese frosting. Garnish if desired.

Notes
